Tonight Joani and I had fresh Red Lake Walleye, potato crisp and deep fried parsnip.  Good Stuff'...




   


   


   

    TThe batter that we used tonight is very easy to fix and inexpensive, we used just 1 cup of pancake batter (Hungry Jack or some type of just add water type mix) seasoning salt, salt and pepper.  The walleye fillets are fresh and left whole, the parsnips were cut about ¼ inch thick and then both were placed in the batter dry and then tossed into the hot oil until golden brown.  I prefer to leave both the fish and parsnips just damp when I put them into the batter that way you do not over power the fish with to much batter, in the past I have tried egg, milk and other dips but then the batter is to thick for my taste.
    If you have never tried deep fried parsnips before you are in for a treat, just add a little horseradish sauce and enjoy.
