CAMPFIRE COOKING WITH
JERRY AND JOANI...
    Joani and I have been cooking outside over a campfire for quite some time, we often have thought just how lucky we were to be able to do this on almost a daily basis. 

    Tonight we had my version of blackened fish, baked potato and fresh "Morel Mushrooms", really good stuff...



     
    First I take the fish fillets (in this case it was northern pike) and marinate them over night in a little lemon juice and Cajun powder.
I season just the side that I will cook with lots of Cajun, the more the better.
    Then place the fillets in a buttered fry pan and cook until done all the way through (do not flip). The morels were coated
in flower and also fried in butter.  Joani always precooks the potatoes in the microwave before placing them on the fire, we like the peel crunchy.
